Try out this latest recipe by Gourmand Award winner Asha Khatau. The taste of tangy sun dried tomatoes and black olives layered over toasted bread with herbs and cheese is the perfect party starter for your friends.

INGREDIENTS

    6 slices of crusty bread brushed with olive oil
    1/4 cup of slivers of sun dried tomatoes
    1/4 cup of sliced black olives
    1/2 cup grated mozzarella cheese
    1 tsp freshly chopped herbs
    Salt & pepper to taste
    Freshly chopped basil for garnish

DIRECTIONS

  • In a bowl, add slivers of sun dried tomatoes
  • Add sliced black olives
  • Add freshly chopped mixed herbs
  • Add salt and pepper to taste
  • Toss all the ingredients together
  • TIP: For the flavours to seep in, this mix can be made the previous day as well
  • Add 1-2 tbsp of the mixture on the crispy toast
  • Add 1 tsp of the grated mozzarella cheese
  • Repeat the process with the slices of toast
  • Bake in the oven for 5-7 mins
  • Once out of the oven, garnish with fresh basil leaves
