A paneer veg frankie is perfect for those situations where you don't have time for a sit-down meal. These delicious Indian wraps are also a great way to get your kid to eat boring veggies! This recipe features paneer and potatoes but you can experiment with any vegetable and cheese of your choice.

INGREDIENTS

    For stuffing:
    2 teaspoons oil
    ½ capsicum, thinly sliced
2 potatoes, boiled, peeled and mashed
¾ cup paneer / cottage cheese, crumbled
1 teaspoon kashmiri chili powder / lal mirch powder
    ½ teaspoon garam masala powder
    ½ teaspoon chaat masala
    Salt to taste
    Other ingredients:
    2 teaspoons butter
    3 chapathi or wraps
    6 teaspoons tomato sauce
    ½ cup lettuce, thinly chopped
    1 carrot, thinly chopped
    ½ onion, thinly sliced
    3 teaspoons green chutney

DIRECTIONS

Firstly, saute capsicum for 2-3 minutes in some oil. Then add boiled potato and crumbled paneer. Drizzle chili powder, garam masala powder, chaat masala and salt on top.
Mix well and shape into cylindrical shaped sticks. Keep aside.
Now, add butter onto the tawa and roast leftover chapathi or wraps on both sides until they warm up.
Place the roasted chapathi or wrap on a flat surface. Slather a generous amount of tomato sauce on top.
Then, make a bed of lettuce, carrot and onion in the centre of the chapathi.
Place the prepared cylindrical stuffing of paneer and aloo on top. Cover it with green chutney.
Fold the bottom of the chapathi, followed by the sides. Roll the frankie into aluminium foil or butter paper.
Serve with tomato sauce and green chutney.
