Hot and crispy onion pakodas are the perfect accompaniment to masala chai. Bite into these luscious besan-dipped bhajias for a taste of pure heaven. Roopa Nabar shows you how to make kanda bhaji, a fried tea-time snack, in Marathi.

INGREDIENTS

    3 onion sliced
    1/2 cup besan
    1 tablespoon corn flour
    1 tablespoon rice flour
    1/2 teaspoon turmeric powder
    1 teaspoon dhanajeera powder
    1/2 teaspoon red chilli powder
    2 green chillies, finely chopped
    1/2 teaspoon ajwain
    1/2 teaspoon baking soda
    Salt
    Oil for frying
    Very little water

DIRECTIONS

In a bowl, add besan, corn flour, rice flour, turmeric powder, dhanajeera powder, chili powder, green chilies, ajwain, baking soda & salt and give it a good mix.
Slowly add water to it so that it has a thick pouring consistency. Make sure there are no lumps.
Then add the onions to this and mix it well so that the onions are well coated with the batter.
In a deep-bottomed pan, heat some oil.
Scoop out the onion mixture bit by bit and add it into the hot oil.
Fry these bhajis till they turn golden brown.
