Procedure:

  • Heat a wok
  • Add oil
  • Add he strips of bell peppers
  • Toss them around
  • Squeeze out water from potato and spread an even layer on the bell peppers
  • Sprinkle salt and pepper
  • Mix well
  • Spread out a layer back on the wok like a pancake
  • Let it cook for 10-15 min depending on the variety of the potato
  • Check if the bottom layer is catching colour
  • Carefully turn and let the reverse side cook
  • TIP: Flip the potato roasty in a plate and slide in from the uncooked side
  • Sprinkle some grated cheese
  • Tip: keep checking on the other side to catch colour
  • Ready to serve
