Chef Amrita Raichand's wholesome and nutritious Baked Eggs is the perfect post-pregnancy breakfast to kick start your mornings. Peppers, mushrooms and a light kick of chilies spice up ordinary eggs. Top with a layer of shredded cheese and bake to perfection for a healthy and delicious breakfast.

INGREDIENTS

    Ramekin: 2(if making an individual portion) or a baking dish if making for all. Multiply this portion by the number of people to be served.
    Eggs: 2
    Yellow and red peppers( finely chopped): 2 tablespoons
    Green chilies (optional): 1 teaspoon
    Cheese (grated): 1 tablespoon
    Coriander leaves(chopped): 1 teaspoon
    Salt and pepper to taste

DIRECTIONS

– Take a ramekin, grease it with butter, add all the ingredients and season with the salt and pepper.
– Now break two eggs on top of the mixture and bake it in a preheated oven at 180* for 12- 15 minutes.
– Serve hot, garnished with chopped coriander or parsley.
