A quick salad for when you are on the go!

INGREDIENTS

    1 medium sized chopped onion
    1 medium sized chopped tomato
    1/2 cup red and yellow bell peppers chopped
    1/4 cup capsicum chopped
    1 tsp chopped ginger
    3 hard boiled eggs
    2 tbsps mayonnaise
    lemon juice
    1/2 tsp mustard sauce
    ½ tsp of salt
    pepper

DIRECTIONS

1. Cut the eggs into even sized pieces and transfer them into a bowl.

2. Combine the egg with mayonnaise, mustard sauce, onion tomato, bell pepper and capsicum.

3. Squeeze half a lemon juice and add salt and pepper as per taste.

4. Toss the salad well, so that all the ingredients mix evenly.

5. Serve cold.
