Rajasthan’s Pyaaz Ki Kachori

    Kachori Filling
    Oil 1 Tablespoon /तेल 1 चम्मच
    Cumin Seeds 1 Teaspoon / जीरा 1 चम्मच
    4 Tablespoon Besan / 4 चम्मच बेसन
    1 Teaspoon Chilli Powder / 1 चम्मच मिर्च पाउडर
    1 Teaspoon Aamchur Powder / 1 चम्मच आमचूर पाउडर
    1 Teaspoon Coriander Powder / 1 चम्मच धनिया पाउडर
    1 Teaspoon Garam Masala / 1 चम्मच गरम मसाला
    1 Teaspoon Turmeric Powder / 1 चम्मच हल्दी पाउडर
    1 Teaspoon Jeera Powder / 1 चम्मच जीरा पाउडर
    1 Teaspoon Ginger Garlic Paste / 1 चम्मच अदरक लहसुन का पेस्ट
    Salt to Taste / नमक स्वादअनुसार
    1 Cup Onion / 1 कप प्याज
    1 Tablespoon Sugar / 1 चम्मच चीनी
    1 Tablespoon Fresh Coriander / 1 चम्मच ताजा धनिया
    2 Cups Maida / 2 कप मैदा
    2 Tablespoon Semolina / 2 चम्मच चम्मच सूजी
    1 Tablespoon Ghee / 1 चम्मच घी
    Salt to Taste / नमक स्वादअनुसार



1. In a pan, add oil, cumin seeds, besan, and mix it well.

2. Add chilli powder, amchur powder, coriander powder, garam masala, turmeric powder, jeera powder, ginger garlic paste and salt. Add 1 cup of chopped onions and mix well.

3. Add fresh coriander and sugar and mix it again.

4. In a bowl, add maida, salt, semolina and ghee. Mix it well with water and knead it into a dough.

5. Take a small portion of the dough and flatten it. Add the stuffing in the dough and get the edges together to seal it properly. Form a bundle and put some oil on it before flattening it with a rolling pin.

6. Add the kachori in the pan and deep fry it till its golden brown.
