Recipe: Bengali Pithe With A Fun Twist

INGREDIENTS

    1 cup - Gobindobhog Rice flour
    1 cup – Mawa
    1 cup – Grated coconut
    ¾ cup – Notun Gur (or Patali gur)
    2 cups – Milk
    Mixed Dry Fruits – Kishmish, kaju etc

DIRECTIONS

Pitha is a Bengali roll or cake. Ananya makes a fusion of pitha as yummy muffins with a sweet coconut filling. The catch is that she does not bake them & they still turn out great.

Method:

1. Mix all the ingredients together (leaving aside a few dry fruits to garnish) and cook on a low flame for 10 min until the batter becomes of a thick consistency.

2. Make sure there are no lumps in the batter.

3. Brush cup cake molds with melted ghee and sprinkle remaining dry fruits into each mold.

4. Pour in the prepared batter and refrigerate for 30 min.
