A quick, simple and easy Pasta cooked in tangy tomato sauce is all you need to lift your mood in no time. Creamy Tomato Basil Pasta topped with grated cheese and flavoured with fresh basil leaves is an absolute treat to your taste buds by Our Chef Kamini Patel.

INGREDIENTS

    5 tomatoes, roughly chopped
    150g baby tomatoes halved
    ½ tbsp. olive oil
    2 tbsp minced garlic
    1 onion, thinly sliced
    fresh basil
    1 tbsp dried oregano
    1 tsp salt
    1 tsp pepper
    50ml cream
    parmesan cheese
    80g pasta – penne or fusilli, cooked – keep ½ cup pasta water

DIRECTIONS

– Place a pan on medium heat.
– Add olive oil, garlic, and onion.
– Add tomatoes, salt pepper oregano
– Let it cook 20 minutes.
– At 15 minutes add the fresh basil
– After 20 minutes, add the cream
– Cook and simmer for at least 10 mins
– Add the pasta and some of the reserved water
Cook and thicken
– Serve with a lot of parmesan cheese
