Soft & Fluffy Idli Recipe

• Soak rice in water separately with few methi seeds. Soak urad in water with few methi seeds. Soak for minimum 4 hours. Use this soaking water while grinding.
• Grind urad into a smooth paste. Place in large container. Grind rice to a smooth coarse paste. Add to urad paste. Mix well. Add salt. Keep in a warm place overnight or for minimum 8 to 10 hrs till well fermented.
• Keep water for boiling in idli steamer. Grease idli plates and pour batter in each plate. Steam for 10 to 12 minutes or till done.
