1. To make the vindaloo paste add ginger, garlic, pepper, cloves, cumin seeds, coriander seeds, cinnamon, red dried chilies , toddy vinegar to the mixer and grind it to a very consistency.
2. Once the paste is ready, sauté some onions in hot oil. After it is golden brown add the paste to the onions. Keep cooking the masala till the oil starts splitting away from the masala.
3. Then add the chicken to the masala. Add salt and sugar to taste and some water and leave it to cook for 10 to 15 mins.
4. Garnish with coriander and serve.
