INGREDIENTS

A bowl of thick dahi (yogurt)
A bowl of chopped palak (spinach)
    Coriander leaves, finely chopped
    ¼ tsp red chilli powder
    Salt to taste
    ¼ tsp pepper powder
    ¼ tsp jeera powder

DIRECTIONS

  • In a pan add 1 cup of water
  • To this, add the chopped spinach
  • Once the water comes to a boil, lower the flame
  • Allow the spinach to boil for about 5 minutes
  • Once the spinach has boiled well, turn off the flame
  • Allow the spinach to cool down
  • Drain excess water out of the spinach
  • Put dahi in a big bowl
  • Using a spoon, blend the dahi well
  • Once the dahi forms a smooth paste, add spinach to it
  • Mix the ingredients well
  • Add salt as per taste
  • Mix again
  • Taste the mixture once to ensure that salt has been added in correct proportion
  • Add a pinch of sugar if the mixture tastes sour than usual
  • Mix the ingredients well
  • Transfer the ingredients into a fresh bowl
  • Garnish the raita with about 1 tsp jeera powder, ¼ tsp red chilli powder and ¼ pepper powder
  • Top it up with handful of coriander leaves
