2 tsp chopped walnut
2 tsp chopped cranberries
Juice of 1 lime
Salt and pepper to taste
1 tsp olive oil
1 bunch spinach leaves, washed, de-stemmed and dried
Put the walnuts in a mixing bowl
Add the cranberries
Tip – You could use almonds instead of walnuts and raisins instead of cranberries
Pour your dressing over the spinach, mix well and serve
Tip – Mix the dressing with the spinach just prior to serving to avoid ending up with wilted leaves
