Are you a spinach freak? Well then, you are sure to love this salad. Delicious and easy to make, the spinach, walnut and cranberry salad is a show-stealer! And there are also many healthy tips for all you people who are on a strict diet.

INGREDIENTS

    2 tsp chopped walnut
    2 tsp chopped cranberries
    Juice of 1 lime
    Salt and pepper to taste
    1 tsp olive oil
    1 bunch spinach leaves, washed, de-stemmed and dried

DIRECTIONS

  • Put the walnuts in a mixing bowl
  • Add the cranberries
  • Lime juice
  • Olive oil
  • Salt
  • And pepper
  • Mix well
  • Tip – You could use almonds instead of walnuts and raisins instead of cranberries
  • Pour your dressing over the spinach, mix well and serve
  • Tip – Mix the dressing with the spinach just prior to serving to avoid ending up with wilted leaves
  • Enjoy your spinach, walnut and cranberry salad!
