  • Cut the zucchini into quarters
  • Scoop out the seeds and flesh
  • Put the zucchini flesh into a blender
  • Add the carrots, garlic, tomato puree, onions, parsley, black pepper and salt
  • Make the puree to a chunky consistency
  • Season the hollowed out zucchinis with salt and olive oil
  • Fill them with the pureed vegetables
  • Add a layer of paneer
  • TIP – Instead of paneer you can use any other topping of your choice
  • Bake at 180 degrees for 15mins
  • Top off with tomatoes & bake for another 10 min
  • Your stuffed zucchini is ready to serve!
