INGREDIENTS
2 garlic cloves
1 grated carrot
30g diced Paneer/cottage cheese
1 tbsp olive oil
1 tbsp tomato puree
1 tomato, sliced
1 onion, diced
A handful of Parsley
1 tbsp black pepper powder
Salt to taste
1 whole Zucchini
DIRECTIONS
Cut the zucchini into quarters
Scoop out the seeds and flesh
Put the zucchini flesh into a blender
Add the carrots, garlic, tomato puree, onions, parsley, black pepper and salt
Make the puree to a chunky consistency
Season the hollowed out zucchinis with salt and olive oil
Fill them with the pureed vegetables
Add a layer of paneer
TIP – Instead of paneer you can use any other topping of your choice
