Risotto is one of those dishes that sound and taste really fancy but are actually ridiculously easy to make! Roopa Nabar shows you how to prepare a delicious tomato and basil risotto for a quick lunch or dinner. Lots of garlic, butter and olive oil give you that typical Italian flavour.
1 cup Arborio rice
2 tablespoons olive oil
3 tablespoons butter
4 cups stock
1/2 onion finely chopped
1/4 cup red wine
1 cup blanched & chopped tomatoes
1/2 cup parmigiana cheese
Salt and pepper to taste
1/4 cup basil toughly chopped
1 tablespoon chopped garlic
In a pan add olive oil and butter and let them blend.
Then, add in chopped garlic, onion, Arborio rice and mix it all together.
Add in the red wine, vegetable stock, chopped tomatoes and mix it again until the consistency thickens up.
Lastly, add salt, black pepper powder, butter, Parmesan cheese, basil and stir.
Tomato basil risotto is ready to serve.
