Compliment your Indian meal with tomato chutney! You can also use it in a sandwich, or in a roti-roll or with chips and nachos- the chutney makes your snack tangy, interesting and delicious!
4 medium sized tomatoes, finely chopped
1 medium sized onion, finely chopped
2 green chilies, finely chopped
1 inch piece of ginger, finely chopped
Few coriander leaves, finely chopped
1 tsp of coriander powder
½ tsp of salt
2 -- 3 tbsp of vegetable oil
Heat a thick bottomed kadai/ deep frying pan
Add 2-3 tbsp of vegetable oil
Add green chillies
Sauté the ingredients until onions turn translucent
Add 1 tsp of coriander powder
Add ½ tsp of salt and half of the coriander leaves
Cover the kadai with a lid and let the ingredients cook 5-7 mins
Use a hand blender to smoothen the Tomato Chutney
Blend the mixture for 3-5 mins until its consistency changes to that of a thick sauce
