Vegetable Masala Khichdi | Dal Khichdi

Vegetable Khichdi is an ultimate comfort food which tastes even more delicious when served with a refreshing bowl of dahi and crispy papad. Go ahead and try this easy peasy recipe by Chef Varun Inamdar and let us know your feedback in the comments below.

INGREDIENTS

    2 tbsp ghee
    1/4 tsp asafoetida
    1 tbsp ginger, crushed
    2 onions, chopped
    1 tsp mustard seeds
    1 tomato, chopped
    1 tsp red chili powder
    1/2 tsp turmeric powder
    1 tsp coriander powder
    1/4 cup cabbage thick cuts
    1/2 cup cauliflower florets, carrots diced, peas shelled
    1 cup toor dal
    1/2 cup Rice
    3 cups water
    1/2 tsp sugar
    1 tbsp lemon juice

DIRECTIONS

Take Rice and dal, rinse with water for a couple of times.
Drain and keep it aside Heat ghee in a pressure cooker.
Add hing, mustard seeds and chopped onion.
Saute it well until it turns translucent Add chopped tomatoes and mix it well
Now add chopped vegetables and saute it for few minutes Then add the powdered spices and mix it well
Add rice and dal rinsed, add water and salt to cook the khichdi
Close the lid and pressure cook the masala khichdi for 3 whistles.
Let it cool Add lemon juice and sugar.
Lastly, garnish it with coriander
