With temperatures soaring, everyone, it seems, is on the look out for easy to cook and cooling food! So, to give you a taste of something really yummy, yet healthy and cooling, we present the watermelon and feta cheese salad!
INGREDIENTS
• 1/2kg fresh watermelon (peeled, de-seeded & cut into triangles)
• 200g feta cheese (cubed)
• 1/2 cup sliced black olives
• Small bunch of flat parsley
• 1/2 cup fresh mint leaves chopped
• 2-3 sliced white onions
• 2 tbsp lemon juice
• 2 tbsp olive oil
• Salt
DIRECTIONS
Pour lemon juice over the sliced onions
TIP: Pouring lemon juice over the onions, will make them transparent
Transfer the chopped watermelon pieces into a bowl
TIP: Arrange the watermelon pieces neatly
Scatter the feta cheese cubes over the watermelon
TIP: Do not toss the feta cheese as it will change the colour of the watermelon
Add chopped black olives
TIP: You can also use green olives or both
Add sprigs of flat parsley
Add mint leaves
Add the soaked onions
Add drops of olive oil
Sprinkle salt
Add freshly ground pepper
TIP: Put a cling wrap on the salad and refrigerate for 2 hrs
