250g grated zucchini
1 tbsp wheat flour
Pepper to taste
Salt to taste
2 tbsp parmesan cheese
1 tbsp chopped basil leaves
½ tsp chopped garlic
Oil for pan frying
1 free range egg
Tip: Instead of yellow zucchini, you can also use the green variety
Make sure that you squeeze excess water out of the grated zucchini leaving it dry
In a bowl of grated zucchini add all the ingredients one after another
Start by beating the egg into the zucchini
Add basil leaves
Add the chopped garlic
Add the parmesan cheese
Add the wheat flour
Mix all the ingredients together
The egg and flour are used as binders
Pinch a portion out of the batter and roll it into a ball
Flatten the ball to make your fritters
Heat oil in a pan
Place the fritters on the pan one by one and fry them well
