Procedure:
- Slice the brinjal fromt the centre
- Put the brinjal in the microwave for 3-4 mins
- TIP: Putting the brinjal in the microwave ensures it softens
- TIP: To check if the brinjal has become soft, Poke knife into it
- Scoop the insides of the brinjal gently
- In a pan, add oil
- Add green chillies
- Add the onions
- Fry the onions till they turn a pale pink
- Add the garlic-ginger paste
- Mix well
- Add little coriander leaves
- Add the scooped brinjal
- TIP: Cook the brinjal for 2 mins
- Add the mashed potatoes
- Add salt to taste
- Add dhaniya powder
- Add jeera powder
- Add little red chilli powder
- Add coriander
- Mix well
- TIP: The filling can also be put in rotis/bread
- For the batter:
- In a bowl, add besan
- Add salt
- Add water
- TIP: The water content has to be very little as the consistency should be thick
- Fill the stuffing in the brinjal shells
- Apply the batter on the stuffed brinjals
- In a non-stick pan, pour oil
- Once the oil is hot, fry the brinjal
- Fry the brinjal on a slow flame
- TIP: The besan and the filling become crisp when cooked on a slow flame
- TIP: You can also add chaat masala on the brinjal
- Bharwa Baingan is ready to be served
