Kadai Chicken


  • Heat the mixed oil and ghee
  • Add the chopped onions
  • Add the bay leaves
  • Stir well until onions are soft and light golden brown
  • Add the ginger-garlic paste
  • Stir well
  • Add the salt
  • Add red chilli powder
  • Add haldi (turmeric powder)
  • Add half of the garam masala powder
  • Add half the coarsely grounded dry masala
  • Stir well
  • Add the chopped tomatoes
  • Stir well
  • Add the tomato puree
  • Stir well
  • Add a few coriander leaves
  • Break and add 1 green chilli
  • Let the masala cook for a few minutes
  • Add the chicken pieces
  • Coat the masala nicely on to the chicken pieces
  • Let the chicken cook for 5-7 mins
  • Add ½ cup of water
  • Stir well
  • Cover the chicken with a lid and let the chicken cook for 20-25 mins
  • TIP: Check the chicken at regular intervals to know when it’s completely cooked
  • TIP: Poke a knife through the chicken to check if its cooked
  • Add the remaining grounded dry masala
  • Add the remaining garam masala
  • Add a few juliennes of ginger for garnish
  • Add handful of diced capsicum
  • Add a few coriander leaves
  • Mix again and serve
