Sesame Brittle

Method
- Roast 1 cup sesame seeds lightly
- TIP: Ensure that the seeds do not turn red
- Once the sesame seeds are roasted, transfer it into a bowl
- Now, melt 1 cup jaggery and 1 tsp ghee
- TIP: The jaggery syrup should be brown in colour
- TIP: To know if the syrup is ready, pour a string in a bowl of water and if it solidifies, it is ready
- Once the syrup is ready, turn off the gas
- Add the roasted sesame seeds
- Mix well
- Apply ghee in a steel plate
- Put the sesame seed-jaggery mixture into the plate
- Flatten it with a spoon
- TIP: While the brittle is hot, use a knife to make pieces
- Cool for 10-15 mins
- Ready to serve
