Fenugreek and Potato Vegetable

Method

  • Heat 3 tbsp oil
  • Once the oil is hot, add ginger-garlic paste
  • Add green chillies
  • Stir well
  • TIP: Fry the ginger-garlic paste for 1 minute
  • Add the chopped methi (fenugreek) leaves
  • Mix well
  • Add chopped tomatoes
  • Mix for 1-2 mins
  • TIP: Cook tomatoes till they soften
  • Once the tomatoes soften, add 1/4 tsp turmeric powder
  • Add 1/2 tsp red chilli powder
  • Add 1 tsp coriander powder
  • Mix well
  • Cover with a lid, to allow the masala to cook for a few minutes
  • Use a blender to smoothen the masala
  • Now, add the boiled potatoes
  • Add salt to taste
  • Mix well
  • Ensure every piece of potato is well coated with the masala
  • Cover with a lid for 5 mins
  • Ready to serve
