Procedure:
- Heat oil in a pan
- Add the onionsˆø
- Cook for a while
- Add the bell peppers
- Stir well
- Cook for 3-4 minutes till the bell peppers soften a bit
- Make sure that the bell peppers are not overcooked
- Cook for another 3-4 minutes
- Add the tomatoes
- Add the carrots and peas
- Cook for 3-4 minutes again
- Add some salt
- Add some pepper
- Add some taco seasoning
- Add some red chilli paste
- Mix well
- Add the cooked rice
- Make sure that the rice grains do not break while cooking
- Transfer rice to a plate
- Garnish with jalapenos and cheese
- Ready to serve
