Aloo Sabzi, the most common sabzi to be prepared in a normal North Indian household

INGREDIENTS

    3-4 boiled potatoes
    2-3 chopped green chillies
    1 tsp mustard seeds (rai)
    1 tsp cumin seeds (jeera)
    12-13 curry leaves (kadi patta)
    1/4 tsp asafoetida (hing)
    1/2 tsp tumeric powder (haldi)
    Salt to taste
    Chopped coriander
    2 tbsp oil

DIRECTIONS

  • Peel the boiled potatoes
  • Heat 2 tbsp oil, let the oil heat well
  • For the tadka: Add 1/4 tsp asafoetida (hing)
  • 1 tsp mustard seeds (rai)
  • 1 tsp cumin seeds (jeera)
  • 2-3 chopped green chillies
  • After adding green chillies put the flame on slow as the chilli flakes will splutter
  • Add curry leaves
  • Add 1/2 tsp turmeric powder (haldi) last to avoid it from turning black
  • Add chopped coriander
  • And now add all the potatoes
  • Add salt to taste
  • Mix well together
  • Garnish with coriander on the top and some lime on the side
  • Ready to be served
