Masala Maggi has been my one true love ever since I was in school. From boarding wali Maggi in high school (made with just cold water & Maggi noodles) to masala Maggi as a paying guest, Maggi has a special place in my heart. There's no surprise there that Maggi is also my lockdown favourite recipe, only this time I'm going a little international with my flavours. We know that there's no Maggi available in the market because we know you've stocked it. For all those who're eating their masala Maggi stock sparingly, these 3 recipes are going to be worth it.

1. Bechamel (White Sauce) Masala Maggi

Bechamel sauce is a white sauce, generally used to make pasta. It is made with 3 key ingredients- butter, maids & milk to which you can add salt & pepper seasoning. This white sauce comes alive when mixed with the masala maker.

How to make Bechamel Sauce: Heat 2 tbsp butter until it melts. Now add 1 tbsp of Maida & whisk it continuously. Before the mixture turns brown, add 1 cup of milk. Keep whisking until the sauce thickens. Sprinkle the seasoning & the sauce is ready. Here is my version, I've added 1 finely chopped green chilli to amp up the spice quotient.

Now add the white sauce to the already cooked Maggi and mix well. Garnish it with chilli flakes & oregano if you like & serve it hot.

2. Arrabiata Sauce Masala Maggi

This arrabiata pasta sauce has to be my favourite out of the three; well because only someone who loves tomatoes would understand this. With vegetable scarcity in the market during this lockdown, I haven't used bell peppers but only onions & green capsicum for this recipe. You could use mushrooms, bell peppers, broccoli etc for this recipe.

Also in this recipe, I've used Dr Oetkars Funfoods, Arrabiata sauce which is easily available in the grocery stores, unlike maida & rava! So, a spoonful or two is a good ratio for 2 packets of Maggi.

How to make Arrabiata sauce Maggi: Saute onions & capsicum in 3 teaspoons of olive oil. Then add the Maggi maker, mix well. Add the 2 tbsp of arrabiata pasta sauce, mix well. Add your seasonings like oregano & chilli flakes. Now add 2 cups of water. Put in the Maggi noodles. Cook until the Maggi is completely cooked. Add black olives as garnish. It's ready to serve.

3. Egg Masala Maggi

This is a complete desi-version of Maggi where the spice box is the hero of the dish along with the eggs of course. This recipe is inspired by Kabita's Kitchen & most of you who love eggs would love this recipe during the lockdown as it is easy to make & adds a punch of protein with eggs!

How to make Egg Masala Maggi: Saute onions & tomatoes in some oil. Add green chillies, coriander powder, jeera powder, turmeric powder & some red chilli powder. Let it cook completely or until the tomatoes are mushy. Crack 2-3 eggs in the same pan on the side and continuously stir them, making a scramble or a bhurji. Now mix it with the tomato masala with the bhurji. Add the Maggi maker, 2 cups of water & Maggi noodles. Cook until the water has evaporated. Serve with coriander as a garnish.
