Crackling Spinach

Finely slice the spinach into thin ribbons

Tip – Discard any stems

Heat oil in a pan

Deep fry the spinach, a handful at a time

Set aside on some paper to drain the oil

For the seasoning, heat a tsp of oil in a wok

Add the garlic

Once the garlic starts, sizzling add the spinach

Salt

Sugar

Chilli flakes

And toasted sesame seeds

Mix well

Serve!
