Khatta Dhokla

In the mood for some lip smacking Indian snacks? How about trying your hands at an authentic Gujarati dish? Delicious and easy to make, the khatta dhokla is a not-to-be-missed recipe!

  • Add the sour yogurt into the dhokla flour
  • Add 1/2 tsp each of fenugreek seeds and sugar
  • Mix well
  • Cover the batter with a lid and keep it in a closed cupboard for 6-8 hours for fermentation
  • Add 1 tbsp of ginger chilli paste
  • Add 1/2 - 1tsp of salt
  • Add 1 tbsp of white butter
  • Mix well
  • In 2 tbsp of warm water add 1tsp of lemon juice, 2 tbsp of oil and 1 tsp of fruit salt
  • Mix and add it to the dhokla mixture
  • Gently mix the mixture together
  • Use a stainless steel plate and grease it with little oil
  • Add 1/2 cup of batter into the plate
  • TIP: If one wants a thin dhokla reduce the quantity of the bater and for a fatter dhokla, add more batter
  • Sprinkle some black pepper and red chilli powder to garnish
  • Steam the dhokla for 5-7 mins
  • Open the lid and with light fingers touch and check on the dhokla
  • Sprinkle few drops of water
  • Use a flat spoon to cut the dhokla into squares or diamonds
  • With a sharp flat spoon lift out the dhokla
  • Plate and serve the Dhokla
